Francoise’ Soup

‘Today, making a simple soup for a wet day, from my mum’s garden: leek, winter turnip (a small daikon), potatoes and onions, thyme and bay. Then some noodles and seaweed. Some instant miso soup for the stock. We had this with some beautiful goats cheese, apples and bread.’ Thanks to Francoise Auvray for sharing this dish with us.

    A beautiful combination of traditional food and a more modern approach as well as a lot of care and passion, and a lot of veg beautifully cooked!: we had silky pumpkin soup (with a touch of cream and smoked ‘andouille’), white fish with root vegetables in broth (incl. parsnip, black radish, turnip, carrots etc), perfectly ripen local cheeses and very delicate desserts. The dessert chef is a Japanese woman. Amazing in this very remote place of Normandy. It’s a cosy and simple place in an old manor house, highly recommended!
