Salsify, satisfy

I did not want to cook yesterday evening… I got home with frozen hands and feet, tired. I had picked up my weekly vegetable & fruit bag from Growing Communities, and could not even be bothered putting the food away. I am always curious of the newsletter inside the bag and I could see there was a salsify sticking out of the bag, the first time we got these in the bag this winter. The newsletter always has a simple recipe, this one was for a salsify fritter. That’s it, I was hooked, forgotten the frozen hands and the ‘tiredness’!  I followed the instructions: grated salsify, sweated, mixed with one egg, herbs, garlic and fried… delicious. I used it as accompaniment to my very simple chunky vegetable & 1 piece of chicken broth which takes no time to prepare (see earlier post). The fritters were delicious especially straight out of the pan when they are still warm and crisp… The salsify does not have a very strong flavour. Like most root vegetables, it only gets sweeter as you cook it.
