‘I cook, therefore I am’

Near the end of a talk by Food Scientist Heribert Watze about the ‘hidden brain’ in our gut, when I am just about scienced-out, he comes up with this absolute gem, which captures the nature of our relationship with food, in relation to our evolution as Human Beings: ‘Coquo Ergo Sum.’ ‘I cook, therefore I am.’ Nuff said. ‘What’s Wrong With Our Food System? And How Can We Make A Difference?’ Birke Baehr, an 11 yr old speaking about the realities of our industrialised food system, and advocating making informed choices about food. In encouraging us to opt for organically, sustainably produced food, Birke suggests we have a simple choice: ‘we can pay the farmer, or we can pay the hospital.’
