iEvolve lunch

Cooking in the Concord Institute kitchen recently, creating a lunch for participants of the iEvolve workshop. The menu was a hearty Barley and Autumn Vegetable broth, topped with panfried Mackerel and Mussels, accompanied by freshly made Sourdough bread, and a warm vegetable Salad with a tangy vinaigrette. Once again, events in the kitchen tend to mirror activity in the workshop upstairs – the journey into the unknown, for me, was my first attempt at creating Sourdough, under the guidance of head chef Kasia Bilewska-Greenbank.

The lunch plate: Bulghur Wheat with Roasted Vegetables, Marinated and Braised Tofu with Onion Gravy, Fresh Salad Leaves with Orange and Lemon Vinaigrette dressing.

A quote passed on to me today by Blandine Bardeau, Production Supervisor for the iEvolve event which took place last weekend at the Concord Institute. Capturing quite beautifully a sense of what is possible when we take a step beyond a life defined by our ‘selves.’

Language of the Heart

I watched this movie last night, fresh from enjoying a similar conversation with a friend, over a meal. During the conversation, we talked about the iEvolve programme on offer at the Concord Institute: one such invitation to go through a looking glass, which Andre speaks of so poetically. The next iEvolve is scheduled for March 16, 17, 18 & 21.

I cooked a simple meal for facilitators of the iEvolve programme which took place this weekend, on the days leading up to the event: One-pot Root vegetable Nabe (Carrots, Leek Squash, Daikon, Turnip, Lotus Root, Miso) with sesame seeds and scallions; Steamed Sprouted Broccoli with Orange dressing and fried garlic; Rice with Barley, Fish and Squash Tempura with Green Nori Sprinkles, deep fried Chickpea Croquettes with Sesame Seeds; Takuan pickle and grated Daikon pickle with Shoyu.

A simple but beautifully composed meal produced by Niall Allen and the kitchen team: the first lunch for participants of the iEvolve programme at the Concord Institute taking place this weekend. Nourishment for an extraordinary journey of self-discovery. In this case, a fresh Pea & Mint Soup, followed by a plate of Udon Rice Noodles with a Tahini Kuzu dressing; Carrot strips (simmered in Star Anise); Leeks; Zucchini Tempura with Green Nori; Spiced Cashews; Toasted Nori Strips; Marinated & Baked Tofu; Smoked Trout & Sesame Seeds, served with a fresh green Salad.

A meal prepared under the watchful eye and guidance of Mutsuko Johnson for the iEvolve course facilitator. An absolute joy to create a slow cooked ‘Nabe’ one pot soup with Seasonal Root Vegetables including Daikon, Swede, Carrot, Sweet Potato & Potato topped with a chunk of panfried Coley. Accompanied by a plate of Aduki Bean Rice Triangles, Baked Squash, Blanched Savoy Cabbage & Broccoli with a Tahini & Miso dressing.
