Soup Kitchen No.3 takes place on Monday 30 January at the Happy Kitchen Canteen. I’ll be creating a Hearty Pumpkin & Miso Soup from scratch using home-made Vegetable Stock and local, seasonal Vegetables. It won’t just be about making soup, we’ll also engage in a conversation about food, inspire our cooking practice, and enjoy a meal together. Soup Kitchen No.2 took place last night, and a class of eager participants joined me at the Happy Kitchen Canteen to create a Hearty Onion Soup from scratch using home-made Vegetable Stock and local, seasonal Vegetables. This is part of an ongoing series of cooking classes, with the next one lined up for Monday 30 January. We’ll be making a different soup each time: next up will be a Pumpkin and Miso Soup. Of course, its not just about making soup. It’s also a chance to engage in a conversation about food, inspire our cooking practice, and enjoy a meal together. Hearty Onion Soup Kitchen

A test run of the Onion Soup I’ll be making at Soup Kitchen No.2, Monday 21 November at the Happy Kitchen Canteen. It’s a traditional recipe, a rich, hearty Soup made with White Onions, White Wine and homemade Vegetable Stock. We’ll use Flour to thicken it, which in this case will be a gluten-free Buckwheat to fit in with Happy Kitchen’s gluten-free ethos. There’s no compromise on taste and flavour. We’ll be serving with Gluten-free or Sourdough bread from from the E5 Bakehouse, and some Gruyere for old-school cheese-lovers. Would you like to join in on the class? Nicky Clinch Pops Up

Introducing the delightful Nicky Clinch. Recent contributor to Wholefood Kitchen, and soon to appear as guest chef at Happy Kitchen’s inaugural Pop-Up night, on Friday 7 October. It promises to be a hum-dinger. The theme of the night is ‘Creature Comforts’ – a hearty three course wholefood meal (plus extras) inspired by comfort foods, but demonstrating that ‘feelgood’ food does not have to come with a serving of self-flagellation. ‘Cooking and creating beautiful food is a direct expression of my heart and a way that I share my love.

For me, creating a dish or a meal is like writing a song or painting a piece of art, each ingredient, colour and texture has its perfect place in the dish, resulting in something harmonious feeding our emotional, physical and soulful needs.

Our planet is full of abundance not lack. I cook aligned with this abundance, using only natural whole foods, sugars and ingredients… working with the seasons, the environments we live in and listening to our emotional and physical needs.

Coming from a history of yo-yo dieting, anorexia & emotional binging my journey and relationship with food has been very intimate, challenging and wonderfully life changing. Who says that to eat healthily, balanced and in a more empowered way we need to deprive ourselves? It certainly did not work for me – instead I am learning and want to share with you how we can eradicate completely this feeling of deprivation and instead eat and live in a more nourishing, utterly delicious & joyfully abundant way.

It is an honour to be working alongside Lisa & Ellie and The Happy Kitchen family to be able to share this vision with everyone. I know it will be a fantastic night!’

Lemon Millet ‘Cheesecake’

Where’s the Cheese? Not here, Grommit. This is a recipe provided by Happy Kitchen, which I tested out using a couple of variations. Both featured cooked Millet, Agave Nectar, Chopped Pears, Apple Juice, Coconut Oil, Lemon Juice & Rind, on a crushed Gluten-free biscuit base; one was created with Blended Cashew nuts and the other with Almonds. I’ll be honest: the results did not receive universal acclaim. It’s surprisingly rich. But it’s an illustration of possibilities which can be explored with food. This is not so much about being ‘non cheese’ as exploring the potential of grains, natural sugars and oils to produce tasty dessert treats, which don’t have to be rammed full of dairy and processed sugars.
