with dried Tamarind and Saigon Red curry, from the kitchen of Cay Tre Soho. A special mention for the delightful Vermicelli Rice ‘pillows’ which could easily be mistaken for face wipes, but are just the ticket for mopping up any leftover curry sauce. Believe me, you don’t want to waste a drop.

Rare Tea Company

One day, when meeting with Hieu at Cay Tre Soho talking menu design and print, I had a chance meeting with Henrietta Lovell, who was about to take Hieu through a few samples from her Rare Tea Company range, selected to complement Cay Tre dishes. Once again, a little investigation uncovers quite a special operation. Henrietta has set up the Rare Tea Company, personally sourcing the very best teas from around the world, applying care and attention in the way teas is packaged and shipped, and simply ‘paying the farmers what they ask.’ Check out the Rare Tea Company website for more details. Some delightful stories are available on her blog, including talk of a visit to Japan where she ‘met a tea master who hand rolls his leaf for 6 hours to create just 250g of mind-blowing Sencha.’ Henrietta is pictured here with a tea grower from Satemwa in Malawi.

An array of delights served up by Cay Tre’s chef, ahead of the Soho restaurant opening. Vietnamese Kitchen Manager Hieu Trung Bui sent his chef off to Vietnam for a couple of months to discover some new recipes. Among the dishes we enjoyed were Charcoaled Scallops served with Scallion Oil, Chilli and Toasted Peanuts; an incredible ‘Pork Belly Handbag’ which would do Louis Vuitton proud: a succulent Honey & Lemon Roasted piece of Pork stuffed with Curry Leaves and served with Chilli Oil and Fried Shrimps; and a Soft Crab Curry served with delightful Vermicelli Rice pillows. Cay Tre opens this week, on Dean St in London. Prepare to be nourished!
